Eggplant Lasagna

Last Saturday we had eggplant lasagna for dinner.It was YUMMY! I'm so glad Aria liked it too.I used the no boil lasagna noodles. They are great time saver.I wasn't sure my son would like it. So,I used only one eggplant. But if you are an eggplant lover, I suggest using 2 eggplants:)

1 eggplant(cut into thin slices)
9 lasagna noodles
1 lb.ground meat(brown)
2 eggs(beaten)
2 cups shredded Mozzarella(part skim) and
1/2 c Parmesan cheese
8 oz. ricotta cheese(part skim)
2 cups spaghetti sauce
2 cups tomato sauce, oregano

Place eggplant slices on a lightly greased cookie sheet. Brush lightly with oil. Sprinkle with salt and pepper.Cover with foil and bake in a 400 degree oven until eggplant slices are soft.

In small bowl mix ricotta, oregano and beaten eggs.Set aside.
Combine tomato sauce,spaghetti sauce and brown ground meat in a bowl.

In a 11 x 7 inch baking dish, layer 1/4 c tomato sauce.Arrange three alternate layers of noodles, ricotta/egg mixture, eggplant slices, Mozzarella-Parmesan cheese, ground meat-sauce.Pour cheese mixture over the all.Cover and bake about 40 minutes. More cheese?? Sprinkle extra cheese on top before serving;)

  2. Eggplant is one of my favorite foods, and this recipe sounds delicious. We prefer our sauce meatless, so I think I'll try it with two eggplants, and minus the ground beef. Thanks, Yonca!

    Joanne,we love eggplant too. Especially hubby is a big fan of eggplant. I also tried it with mushroom instead meat. Hubby and I love it but my son didn't eat it.

    Molly, aren't they the time saver? Plus, not bothering with the mess of boiling the noodles.

  6. Aren't the no-boil noodles awesome?? I just discovered them myself and they are soooo much easier than having the ones you need to boil?

    Your eggplant lasagna looks SO good!! I've never had luck making anything with eggplant...I'm obviously doing something wrong!

  9. Tracie, I also made lasagna without meat and veggies. Only sauce and lots of lots of cheese:)hehe ..cheese makes everyone happy!

    Helen,oh those noodles are great! Lol, it is a dry veggie and soaks up oil;) So I soak eggplant in salt water for about 10 - 20 minutes before using them.

    Ms Bibi, actually my son doesn't like eggplant either. If I used 2 eggplants I think he wouldn't eat it.But he loved it like this:) Hope your kids like it too:)

  13. Lisa Anne, if you like zucchini, just use zucchini and red pepper instead of eggplant. (tested:))
