Scrambled Eggs with Feta Cheese

(for 3)
6 eggs or 1 1/2 cup egg beater
1 tsp oregano
1/2 black pepper
1/2 cup crushed feta cheese (low fat), milk

In a bowl beat the eggs. Add cheese, pepper and oregano. Spray a nonstick omelet pan.
Pour a splash of milk into the eggs. The milk helps keep the eggs light and fluffy. Stir the eggs with a silicone spatula to begin to scramble them.

If you want an all around "good for you" and you aren't terribly concerned with cholesterol, use the original. If you want extra protein, less fat, then use the beaters.

Egg beaters has 6 grams of protein, 0 fat, 30 cals, and 0 cholesterol. They are great to use when you want an omelette or scrambled eggs.

You may seperate the yolks and add only one egg yolk. One egg yolk has about 300 micrograms of choline. All I know is, it is an important nutrient that helps regulate the brain, nervous system, and cardiovascular system.

My son loves loves this! Here is a picture of him while he was eating his scrambled eggs with cheese for brunch! I love the swetear he wore and I'm still keeping it :-)


  1. I always pull out the yolks. I didn't realize there were such vital things in them though. I guess I'll have to start using them in moderation. I tend to be an Eggbeaters gal. ;)

    They sound delicious with feta cheese!

  2. My son loves this, but I usually use velveeta cheese or cheddar.

    We aren't big feta cheese fans here, so we usually add cheddar. I also like to add some peppers and onions and sometimes even some ham...yummy! :)

  4. mmmmmm, sounds yummy. I eat eggs once every other week or so, so I usually use the yolks and the white as well. My favorite omlette is a spinach and feta, sooo good!
