Between summer and winter..

One of my favorite products of Panera Bread is 'Potato Soup'. Yesterday, I was thinking of it but since there is no Panera Bread in Izmir, I decided to make my own potato soup. We all realy liked it and I want to share this recipe with you guys.

3 potatoes(peeled,cut in to 1-inch cubes)
4 cups chicken broth
2 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon garlic powder
Crushed red pepper flakes,
Dry mint
Fresh ground black pepper, salt
2 cups milk
2 teaspoon plain yogurt


Place potato cubes in a pot. Enough water until cover and cook until tender.
Add chicken broth,milk, yogurt, onion powder, black pepper and salt to flour, mixing until well blended and cook until thickened.
Melt butter in a saucepan over medium heat. Add red pepper flakes, mint for garnish.

I love soup even though it's summer.I also love icy water even it's autumn and winter. Weird ha?

I was checking everstar ice machine, maybe you may interested in buying ice maker so want to share it with you guys. You may also need a bbq grill light which is very helpful actually in the dark to see what you're doing and avoid catching anything on fire when you're grilling outside.

Winter Soup: A delicious bowl of health benefits!

Still snowing here! I stopped watching snow since we got enough snow and storm in New York this year:(

I know a way lighten up my day ..

..busy, busy in the kitchen making my winter soup to warm up all of us today!


2 potatoes
1 big carrot
I clove garlic(minced)
1 onion
2 celery stalks
1 leek
1 parsnip
1 turnip
lemon zest
1 tbsp whipped butter
1 tbsp flour
1/2 cup milk
a handful of parsley-dill mix(chopped finely)
salt, pepper,
chicken broth


Chop or dice all the veggies and prepare to boil. Combine the potatoes, carrot, celery, leek, parsnip, turnip, onion, parsley, dill and lemon zest in a pot. Cover them with half water, half chicken stock and boil until soft.
Pour into a food processor/blender and pulse-chop so that the vegetables are chopped finely. Return the mixture to the pot and to heat through. Add salt, pepper and garlic.

Meanwhile, melt the butter in a large saucepan. Blend in flour and gradually add the milk, stirring constantly and add the sauce to the soup. Thin the soup with some stock if you wish. Bring to a boil.

This easy to make recipe brings a delicious bowl of health benefits to your table and makes an excellent start to a winter dinner.

This weekend the weather was sunny and gorgeous. Hope everyone had a great weekend. A little chilly and rainy today! I'm in kitchen now and making a yummy soup!

Cream of Mushroom Soup

Do you like home made mushroom soup? I am making mushroom soup today! Let's get started. Shall we?? ;)
8 onces mushroom
2 tbsp butter
2 tbsp flour
4 cups chicken broth
1 cup half in half
1 medium sweet onion(chopped)
juice of 1 lemon
black pepper, paprika,tyme,salt

In a large saucepan, cook mushrooms with onion in 2 cups of broth until tender. In blender or food processor, puree the mixture with lemon juice. Set aside.
Melt the butter in a large saucepan. Add flour and cook, stirring constantly about 2 minutes, until smooth. Slowly add half in half and mixture while stirring and add remaining chicken broth. Add spicy and salt. Stirring constantly, bring soup to a boil and cook until thickened.

creamy chicken noodle soup





Yesterday I went to Stop &Shop.
It seems Stop&Shop is getting cheaper. Prices weren't too bad. But another thing I saw made me think 'wow'

Anyway, let's not make this soup too salty and stay healthy ;-)

1/2 chicken, cut up
2 tbsp flour
4 handfull thin noodle
3/4 cup milk or half in half
salt,black pepper, dry mint, garlic(minced),
fresh lemon juice

In a large saucepan cover chicken with water. Bring to boil. Cook till tender. Remove chicken from bone. After chopped add chicken and noodle to the broth.
Meanwhile, mix half in half, flour, spicy, garlic, lemon juice in a small bowl. Add the mixture to the soup and stir occasionally. Cook 5 more munites. Ready!

Spicy Tomato Soup





















I tried different recipes of tomato soup. Sometimes I put noodle in it instead flour.
That taste good too.

But this creamy recipe is our favorite.


Ingredients
4 tomatoes (pureed)
2 tbsp tomato paste
1 small onion (chopped)
1 tsp black pepper, salt
1 pinch oregano
2 tsp dry mint
2 tbsp flour
1/2 cup milk or cream
2 tbsp vegetable oil
4 cups of chicken broth
mozzarella cheese(shredded)
bread(cubed and roasted)

Put chicken broth, tomato puree, paste( mix in a cup of chicken broth before put into the soup) onion, flour in a pot. Cook over medium heat. Continue to stir.
Meanwhile, cut the bread slices in cube and roast in preheated oven (400 F)
Remove the soup from the heat and put through a stranier to smoother the soup.
Add salt, spicies and milk. Bring just to a simmer.
Garnish with mozerella cheese and serve with roasted bread cubes !

Turkish Red Lentil Soup

easy to make, cheap and freezes well,
increase your energy, good sauce of iron.
You can use yellow split peas instead
Ingredients
1 lb. red lentils
1 onion (chopped)
1 carrot (sliced)
1 potato (peeled and cubed)
1 tbsp tomato puree
6 cups water,
1 tablespoon flour
2 tablespoon butter
salt, black pepper and paprika

Pick over and wash lentils. Put the lentils, onion, potato and carrot in a large thick-bottomed
pan(or a pressure cooker) and add water. Cook until they are all tender.
Liquidize in a blender. Put the mixture back in the pan. Add salt, black pepper.
In a saucepan put the butter and melted. Add flour and stir with a wood spoon 2-3 minutes than
add this mixture and tomato puree to the soup.
Cook 10-15 minutes more.
Sprinkle with paprika and serve!

That is one of my childhood favorites. My mom used to make for all of us!



tips: It is tasty! But some of us don't eat lentils.
Lol, lentils give real bad gas and intestinal cramp.
I put a teaspoon baking powder when the lentils are boiling, it works! ;)
