MANTI Recipe


dough;
3 cups all purpose flour
1 cup water
1 egg
1 tbsp olive oil
1 tsp salt
Put all the ingredients in a bowl and make a quite hard dough. Cover it and put aside.

filling;
2/3 lb ground beef
1 small onion grated
salt, pepper
Combine all the ingredients and knead it well.

yogurt garlic sauce
1 1/2 cup plain yogurt
2 gloves garlic
Mix yogurt and minced garlic.

spicy butter sauce;
7 tbsp butter
1 tbsp tomato puree(optional)
1 tsp paprika

Divide the dough into two or three. Roll them out seperately. (very thin) And cut into squares(1inch) with a pizza cutter. Take little pieces from the filling and put onto squares. Close the squares diogonal sides.
(Repeat with the second and the third part of the dough) Hope pictures help. After finished all squares boil them in a large pot just like pasta.(~15minutes)

Just before serving- Heat the butter in a small pan. Add paprika and tomato puree. Don't let it burn. Remove from the heat.

Divide the manti to the plates and add 1-2 tbsp water from the pot over each. Spoon yogurt&garlic sauce over manti and drizzle with spicy butter sauce on top. Garnish them with dry mint. Serve hot.

It took me almost 2 hours. I haven't made this dish for a while. So I wasn't as fast as before lol. Anyway, if you have time and wanted to try something new and delicious, this traditional turkish recipe is totally worth a try.

Every mothers day my mom used to make manti and we all used to get together. It is not a recipe you can make often. But when you taste once you might want to eat every day :) Anyway if you don't have time to prepare this dish you can find it -ready to boil in turkish markets or you can taste it in turkish restaurants.

I received some pomegranete juices from POM Wonderful. It is 100% pomegranate juice and delicious. I'll tell you all about it in my next post.

Pumpkin desserts


My PC is running too slow lately. I haven't been able to comment your sites without clicking twice. And sometimes my comments go through twice. I'm sorry for this and still trying to fix this problem.

Hope everybody is having a great week. My son decided to be a spider-man for this Halloween. We looked for a Michael Jackson costume. Only could find them at Target but, they were all WAY too big. Then he changed his mind and decided to be a SPIDERMAN!!!


PUMPKIN DESSERTS
My hubby loves this traditinal Turkish dessert. He kept asking me last week.
Yesterday, I made it!



KABAK TATLISI (Turkish Pumpkin Dessert)

This is traditinal, popular Turkish dessert and very easy to make.
1 small pumpkin(peeled)
2 cups sugar
4 cloves
1 lemon juice
crushed walnuts or coconut(grated)


Cut the pumpkin into big chunks, place in a wide saucepan, layered with the sugar.
Sprinkle with the water and leave to stand for a few hours until pumpkin is juicy. Place the pan over a low heat, add cloves and lemon juice.The cloves give a nice spicy warmth to the syrup. Cover it and cook until tender. Arrange the pumpkin pieces on the serving dish. Let it cool. Sprinkle with crushed walnuts or grated coconut. I also spread some whipped cream on top. Ready to serve!
Yep, my hubby will love me even more for this one. Hehe..

If you have canned pumpkin here is another easy recipe;

PUMPKIN DESSERT WITH COCONUT COOKIES

I love pumpkin, cinnamon, nuts and coconut combination. And I usually have coconut cookies in my pantry :)

14 oz. coconut cookies (I used leftover coconut cookies)

15 oz. pumpkin (canned)

1 cup sugar

1 tsp cinnamon

1/2 tsp ground nutmeg

1/2 tsp ginger

(or 2 tsp pumpkin pie spice)

whipped ceam, crushed mix nuts(unsalted)

Break cookies in pieces. In a bowl combine pumpkin, sugar and spices. Add cookie pieces and mix it. Place the mixture in Pyrex pan. Cover with whipped cream, and top with crushed nuts.

kabak graten(zucchini gratin)


I love autumn in Long Island.
But spring..
grey,rainy(sometimes 4-5 days) so boring!
Another day. No sun again, not shown up once ; (

(i got this recipe one of my friend,haven't tried yet.
that's why i 'm publishing without photo).

Ingrediets
5 small zucchinies
1/2 cup feta cheese(crumbled)
1 tablespoon fresh dill(finely chopped)
1 teaspoon mint(fresh or dry)
Peel the zucchinies and cut them half in lenghtwise. Remove and discard the seeds.
Combine the filling ingredients and fill in the zucchinies.

Sauce
2 tablespoon olive oil or corn oil
2 tablespoon flour
2/4 cup milk

Put oil in a small bowl. Add the flour and mix with a wood spoon. Add milk(warm) and stir slowly. Cover the zuhuccinies with this sauce.
Cook in preheated oven(400 F) untill tops are golden brown.

köfte

Turkish Cusine's famous dish,
k ö f t e !
Tekirdag köfte, izmir köfte, akçaabat köfte,
kadin budu köfte, hasan pasa köfte, inegöl köfte ..
I was searching, just got this information and wanted to share with you. There are 291 types of köfte in Turkish Cusine. Finely minced meat mixed with spices, onions and other ingredients is shaped by hand and grilled, fried, boiled or baked. Köftes are named according to the cooking method, ingredients or shape.
Here is an easy recipe of köfte,
to please the kids-alike! :)

Ev köftesi
(home style grilled hamburger)
Ingredients:
2 lb. ground beef
1 onion (minced)
1/4 cup chopped flat leaf parsley
4 thin slices bread (squeezed)
1 egg
1 clove garlic (minced)
1 teaspoon black pepper
2 teaspoon salt






Combine ingredients for in a bowl and mix together squeezing with fingers to incorparate untill smooth. Shape into oval petties firmly. Prapere grill or heat skilled. Turn to cook both sides.
Goes great with salads and pilaf. Tonight I will serve with mashed potato and green salad.
