I downloaded something on Valentine's Day and ever since then it's like my computer is dead. I'm using a friend's computer now until mine gets fixed. Thanks for your comments and emails. It will take some to catch up. Really missing y'all!
Best and worst things last week;
:) I had a wonderful Valentine's Day with my lifetime valentine..hehe.
:( Ugh! It ended with a dead computer!
:)I met one of my friends last week. I couldn't see her more than 5 months. We had a great time together.
:( I don't know when can we see each other again. Because she is moving from New York to Florida.
:) I spent a l0t of time with my son since schools was closed for a week. We also made a playdate and I had a good time as much as my son talking to his friend's mother.
:( We had a flat tire while coming back home. Then I called my husband with the good news!!!

La, la, la.. I'm a monkey!
The snow stopped and the sun came out! The scene outside my window is beautiful!
We had a late breakfast today.My son asked what my favorite fruit is. I said 'I really don't know. I never though of it before, I think all of them'.
He said 'if you would be allowed only one, what would you choose? ' Ok, he loves to talk while eating. He always finds a topic and makes my mouth busy.
Lol, kind a good for me. I eat less:) right?
-'Is apple your favorite one that you eat everyday? ' Then I realized that I cannot live without banana and orange. I said 'don't ask me to make it only one! I eat apple everyday but I really enjoy to eat banana and orange more than apple. Also everything with them'. He said 'I love banana too. I'm a monkey! Then he made up 'I'm a monkey' song and I listened that song
ALL MORNING :)
-'What time does your favorite show start?'
Schools are closed today and it seems like I will hear that song again and again for the rest of the day! We are having a lazy day!

Mom's Spinach Dish
It is 30 something degrees outside. Brrr, cold. It snowed today. We didn't get lots of snow this time. A quick and easy spinach recipe for a cold-weather food..Warm, tasty, healthy and easy! Lol, it is weekend. So I looked for an easy one and made my mom's spinach recipe today.
Spinach..spinach...spinach...
9 0z. fresh baby spinach(chopped)
1/4 pound ground beef
2 tbsp oil
3 tbsp tomato puree
1 onion(chopped)
2 tbsp rice
1 cup hot water, salt
Saute onion in oil in a large pot. Add ground beef and brown. Then stir in tomato puree and add spinach. I know it seems a lot of spinach:-) Not really. Combine, cover and simmer for about 5 minutes, stirring occasionally. Then add rice and water(hot water) and cook until rice is soft(15-20 minutes). It depends on the type of rice chosen. I used- Uncle Ben's Enriched Parboiled Long Grain. You can add some black pepper to this dish if you want. I always had this spinach dish with plain yogurt. That 's how my mom used to serve it.
If you want to make this recipe easier, grab yourself one of those great little bags of thoroughly washed spinach from the store.

One little change!
I bought this wooden bowl from Marshalls for a while ago. I totally forgot it was in attic. How could I forget this bowl? I was cleaning the attic and found it. Love fruit decor and I placed these glittery yellow, red and green pears in that bowl and I used it as centerpiece for my dining room table. It became one of my favorite items in our home :)
