cheesy puffs


These are very quick snack or breakfast when you feel like something cheesy.
You can use any kind of cheese, my favorite is Turkish white (feta) low fat cheese.
Add a little black pepper and chopped parsley..
Hmmm yumm!

Ingredients
2 large organic egg
3/4 cup milk (reduced fat)
1/2 teaspoon baking powder
2 tbsp vegetable oil
2 cup unbleached flour, sea salt

filling;
5 tbsp crushed feta cheese (less fat)
handfull parsley(finely chopped),
1/2 tsp black pepper

Beat 1 egg and 1 egg white, add rest of the dough ingredients, make a dough.
Mix feta cheese(crushed), finely chopped parsley and black pepper for filling.
Use the paper cups. Put the full of tablespoon dough into each cup, then filling (1 tablespoon for each cup) and cover with dough. Brush with the egg yolk. Sprinkle sesame and black onion seeds. Cook 20 -25 minutes till light brown. Serve warm.

Cream of Cauliflower Soup


This is one of my old posts published in 2008. I made this delicious and healthy soup again and took another pic of it. Just updated. (Cream of Cauliflower Soup/ Kremalı Karnıbahar Çorbası)

"I tasted cauliflower soup for the first time two days ago in Rockefeller Center Cafe. It was delicious. My son, Aria doesn't like this veggie but he likes this soup. Cauliflower has a very strong scent though. 
Yesterday, I ran to Stop & Shop to get cauliflower and create my own recipe. If you squeeze a little lemon, it is possible to cook cauliflower smelling. Vinager also has the ability to neutralize the cauliflower's odor.



Ingredients;
1 small cauliflower head(cored and roughly chopped)
3 cups chicken broth
1 onion (grated)
3 tablespoons flour
1 cup milk
1 cup plain yogurt
Fresh lemon juice
1 glove garlic(minced)
2 tbsp butter
A dash of cayenne pepper,
Mint flakes, salt

Bring cauliflower and  chicken broth to a boil in a large pot. Add onion, garlic and lemon juice. Allow cauliflower to simmer until soft.

Blend in a food processor until smooth.

Meanwhile, mix yogurt, milk, flour and salt. Add to the mixture.
Stir and cook for 10 minutes.

Heat the butter in a small saucepan. Add the spicy mix. Drizzle the spicy butter on top.

Serve immediately and an appetite for something really wonderful!
