Chick Peas Salad

Today we went shopping for my son. Schools open next week.
His pants I bought him in the spring are still new. But they don't fit him anymore!
He is growing so fast!!!

When I got back home grabbed a Goya Chick Peas and made a salad.
My mom used to buy dry chick peas, soak them overnight and then she used to boil them. I do use dry chick peas too :-)
But today, I really wanted to make this salad and I used canned chick peas. Anyway, taste was good..
I haven't made this salad for a couple months.
My husband said "oh, my favorite salad! "
He says that for every salad I made !
I couldn't figure it out yet..Which one is really his favorite or most favorite??? Maybe he's just being kind :-)

I still don't know but I love this salad with chicken breast and rice :-)
Dry or canned!!!

15.5 oz. canned Goya Chick Peas (drained and rinsed)
1 small red onion(chopped)
1 medium cucumber(chopped)
1 red bell pepper
balsamic vinegar,
olive oil, minced garlic,
oregano, salt and pepper

Toss all ingredients together and chill!
Ready to serve!
If my son doesn't eat chopped up cucumbers all while tossing it :D)

  3. Boys do grow super fast! Colton outgrew his school shirts that we bought just last spring. I was laughing so hard when he tried them on because they were so tight and short LOL.

    I have never tried a chick pea in my life but have always been curious about them. I've seen them used in so many recipes lately. I may have to give your recipe a try :)

  4. You know I am not the best cook (ha ha) but I am such a fan of GOYA! I love making black beans with some sofrito and cilantro (I buy that in the can, too). :)

    I'll have to give some chick peas a try!

  5. That sounds super good, I'll have to try it. I finally put my hubby on a scale, every time we have something new, I ask him where it sits-1 being wants maybe once a season, 10 being once a week. that helped me figure it out!

  9. Interesting! I am not sure if I have ever tried chick peas, but this sounds quite yummy. I may have to try it and see. :)

    Oh, and I completely know the feeling of the outgrowing of clothing! Why is it they always grow so much over the summer?
