Do you like eggplant?

How about if stuffed with ground beef, sounds good?
My son doesn't like eggplant. Loves to it just stuffing when i am cookin this dish.
But my husband loves it. So I am cooking karniyarik today!

Stuffed eggplant with ground beef.
Also could be stuffed with architoke too.
Next time I will try.

You now what this traditional dishes has a funny name actually. 'Karniyarik' means 'craked belly' :)

KARNIYARIK
5 baby eggplants
1 pound ground beef
1 onion (finely chopped)
1 tomato (sliced)
hot green pepper or bell pepper cut in length wise
spicy(black pepper, cumin, paprika)


Soak the eggplants in the salted water 15-20 minutes, squeeze. Split them, crack enough to stuff the mixure. Oven tempature is 400 degrees, cook until soft
Meanwhile prepare the stuffing.
Cook ground beef until brown, add onions, garlic, spicies, salt and a little vegetable oil.
Sometimes I add parsleys , finely chopped..smells good ;)
Stuff the mixture in the split eggplants, garnish with pepper and tomato slices. Add some hot water and salt, back to the oven till green peppers softed.

  2. Its sounds and looks sooooooooo good i may have to try and make this dish. I've been checking in for time to time and i thank you for sharing your skills in the kitchen. I enjoy cooking as well. I do most of the cooking and my beautiful girl does the dishes with my help of course.
