Cream of Cauliflower Soup


This is one of my old posts published in 2008. I made this delicious and healthy soup again and took another pic of it. Just updated. (Cream of Cauliflower Soup/ Kremalı Karnıbahar Çorbası)

"I tasted cauliflower soup for the first time two days ago in Rockefeller Center Cafe. It was delicious. My son, Aria doesn't like this veggie but he likes this soup. Cauliflower has a very strong scent though. 
Yesterday, I ran to Stop & Shop to get cauliflower and create my own recipe. If you squeeze a little lemon, it is possible to cook cauliflower smelling. Vinager also has the ability to neutralize the cauliflower's odor.



Ingredients;
1 small cauliflower head(cored and roughly chopped)
3 cups chicken broth
1 onion (grated)
3 tablespoons flour
1 cup milk
1 cup plain yogurt
Fresh lemon juice
1 glove garlic(minced)
2 tbsp butter
A dash of cayenne pepper,
Mint flakes, salt

Bring cauliflower and  chicken broth to a boil in a large pot. Add onion, garlic and lemon juice. Allow cauliflower to simmer until soft.

Blend in a food processor until smooth.

Meanwhile, mix yogurt, milk, flour and salt. Add to the mixture.
Stir and cook for 10 minutes.

Heat the butter in a small saucepan. Add the spicy mix. Drizzle the spicy butter on top.

Serve immediately and an appetite for something really wonderful!

      I love cauliflower too but i don't like the way the kitchen and also living room smell afterwards. Aria can't stand that smell either.

I find that making a soup is one of the best ways to get my son to eat his veggies(at least some of them) Besides, since i tasted this soup in cafe, i loved the taste and added cauliflower soup to my veggie soup recipes. Aria likes it. Hope you and your family enjoy the taste too.
