pasta salad

That's it! School is over..
My son and me, we really enjoyed today,
spending some time in the kitchen together.
Also cleaning to the kitchen after we've done
was fun too.
Just took more time than cooking :))
We prepare a pasta salad as all of us might like.

Ingredients
1 lb. elbow pasta
2 large green onions
1 red bell pepper(cut into the strips)
1 cup broccoli (chopped)
feta cheese(crumbled),olives(remove the stones)
1 cup dressing
for dressing;
seasoning mix, fresh lemon juice or red wine vinegar

Cook 1 pound of pasta. Don't worry if the pasta sticks together.
The dressing will break it up.
Add broccoli and bell pepper (during the last minute of boiling)
Drain but do not rinse the pasta.
Combine feta cheese, olives and green onions
Toss the salad and dressing only 15 minutes before serving.

O oooo ! Did we miss something ? Where is my feta cheese?
Than again it was fun. Also my broccoli is talking. It says 'eat me up!'
What about yours? It worked for Aria. Hope works for your kid too.

Cream of Cauliflower Soup

This is one of my old posts published in 2008. I made this delicious and healthy soup again and took another pic of it. Just updated. (Cream of Cauliflower Soup/ Kremalı Karnıbahar Çorbası)

"I tasted cauliflower soup for the first time two days ago in Rockefeller Center Cafe. It was delicious. My son, Aria doesn't like this veggie but he likes this soup. Cauliflower has a very strong scent though.
Yesterday, I ran to Stop & Shop to get cauliflower and create my own recipe. If you squeeze a little lemon, it is possible to cook cauliflower smelling. Vinager also has the ability to neutralize the cauliflower's odor.

Ingredients;
1 small cauliflower head(cored and roughly chopped)
3 cups chicken broth
1 onion (grated)
3 tablespoons flour
1 cup milk
1 cup plain yogurt
Fresh lemon juice
1 glove garlic(minced)
2 tbsp butter
A dash of cayenne pepper,
Mint flakes, salt

Bring cauliflower and  chicken broth to a boil in a large pot. Add onion, garlic and lemon juice. Allow cauliflower to simmer until soft.

Blend in a food processor until smooth.

Meanwhile, mix yogurt, milk, flour and salt. Add to the mixture.
Stir and cook for 10 minutes.

Heat the butter in a small saucepan. Add the spicy mix. Drizzle the spicy butter on top.

Serve immediately and an appetite for something really wonderful!
This is a perfect comfort food for the whole family. Enjoy!"

4 tablespoon organic sugar
2 cups of milk(%1 reduced fat milk)
4 tablespoon flour
2 tablespoon cocao powder
1 tablespoon buttery spread(smart balance omega light)

1 cup coconut flakes

for the decoration
cake mate decorating icing (red and brown)

Mix egg yolks, sugar and milk in a bowl.
Combine flour and cocao powder and add to mixure.
Cook over medium heat. Stir until thickened. Remove from the heat.
Pour in a mixer bowl, add buttery spread(melted),jam and mix 1 minute.
Meanwhile, crush cookies and add to the mixture.
(I used 100 calories chocolate cookies)
Press into hearth shape cake pan.(non-stick finish and quick release)
Sprinkle coconut all over the cookie cake. Cover and refrigerate.
Make 12 little hearts and 1 big hearth on foil with red icing and refrigerate
a few minutes. Write your own message on the big hearth shape with brown icing, refrigerate again. Place the hearts on the cookie cake, cover and keep refrigerated.
